Spinach and Chicken Curry (AKA Saag Chicken)
1Roughly chop or slice onions and tomatoes
2Saute onions in olive oil over medium heat for 15-20 minutes (careful not to let it burn)
3Stir in ginger and garlic, and sautee for an additional 2-3 minutes
4Add in tomatoes, turmeric, corinader powder and sautee for an additional 2-3 minutes
5Turn off heat, and place onion/tomato mixture in blender with yogurt and puree to course grind
6Put mixture back on heat, and sautee for 2-3 minutes
7Add in spinach, 1 cup of water, and salt. Cover and cook on medium heat for 15-20 minutes.
8Add in chicken, cover, and cook on medium-low for 10-15 minutes.
