Mini Meatballs

The most delicious meatballs you will ever have--period. My twins are at a picky age right now, they refuse most everything I make them. I was ecstatic when my son ate 4 of these, and my daughter had 3. The only problem was my husband kept wanting to eat them, and I had to keep reminding him we were saving them for the kiddos!

  • Yields: 50 mini meatballs

Ingredients

2 tsp olive oil

1 medium onion, chopped

2 garlic cloves, minced

1 lb lean ground beef

1/4 cup fresh breadcrumbs (2 medium slices of bread (regular or gluten-free works))

1 tbsp fresh parsley

1/4 cup Parmesan cheese, freshly grated

1/3 roma tomato

½ large gala apple

1/2 unsalted vegetable bouillon cube

1/4 tsp salt

1 egg

Vegetable oil, for frying

Directions

1Heat the olive oil in a large saucepan and sauté the onion for 5-10 minutes, stirring until softened. Add the garlic and sauté for 30 seconds. Set aside to cool.

2In a food processor, combine onion/garlic mixture, parsley, tomato, vegetable bouillon, salt, and egg. Pulse a few times until all ingredients are combined well and onion and parsley are chopped into very fine pieces.

3In a bowl, mix together the beef, breadcrumbs, Parmesan, apple and mixture from food processor.

4Form the mixture into approximately 50 mini meatballs.

5Heat the vegetable oil in a frying pan and sauté meatballs, until browned and cooked inside. Cover pan periodically while cooking the meatballs to make sure meatballs are evenly cooked. Drain on paper towel.
