This puree is a favorite of my twins. Hearty sweet potato, butternut squash, sweet pear, and creamy butter--NEVER FAILS!
Yields: 3-4 servings (approx. 14 oz)
1/2 sweet potato
1/2 butternut squash
1Peel and chop the sweet potato, butternut squash, and pear.
2Steam all vegetables and pear together until sweet potato is tender (approximately 15 minutes). I use a Beaba Pro BabyCook, but you could also steam over the stovetop. If you can avoid it, try not to boil the vegetables, as a lot of nutrients are lost that way.
3Transfer steamed veggies and pear to blender along with some of the water used to steam them.
4Add butter to blender.
5Puree to desired consistency.
6Cool and serve!
*Suitable for freezing
*Add 1/2 tsp of cinnamon for extra kick
*Potatoes and SWEET apples can be substituted for the sweet potato and pears
